Seeds from Chimayo Chile Hot Peppers is a famous New Mexico chile from the farming town of Chimayo in northern New Mexico, at 5,900 ft elevation. Seeds from a collective of more than 50 farmers, who are dedicated to preserving the authentic chile of the region. Mildly hot 3 to 5 inches long fruit are probably the earliest chili to ripen to red. Thin skinned and easy to dry which is eaten and dried and ground into a spectacular and distinctive chile powder. Some say that the Chimayo is in the running for best tasting chili powder. Since it is not too hot, you can use it in large quantities and achieve flavor nirvana, not heat nirvana.
